Paleo Buffalo Cauliflower Pizza

If I was stuck on a deserted island and had the choice of one food to eat, I would hands down choose pizza!

My name is Tina and I am a pizza addict. I like all kinds of pizza. Veggies, meat lovers, pineapple (yes, I went there), and everything in-between.

What’s great about pizza is that there are SO many ways you can make it, including different types of crust. Although, I do enjoy a traditional wheat flour crust pizza (balance my friends) from time to time, my body doesn’t enjoy it as much because gluten and I aren’t great friends. Gluten is a common culprit for many people and their health issues/concerns. Most don’t realize that symptoms like brain fog, fatigue, bloating, acne, etc. can all be related to gluten consumption. So, I look to alternatives to still enjoy my most favourite food on the planet.

Being a Holistic Nutritionist in this century is so exciting because so many health and wellness companies are popping up left, right and center with amazing health conscious products. One of my favourite things to do in my practice is take my clients on grocery store tours to help them read labels and to show them all the alternatives out there. Don’t worry, the products are always equally as delicious, if not better!

One of those companies is Simple Mills. They have taken classics like chocolate chip cookies, pancakes, cupcakes and pizza and made their own spin on them with minimal ingredients that are healthier for you. What’s great about their almond flour pizza mix is that all you have to do is add apple cider vinegar, olive oil (or avocado oil) and water to the mix and you have some dough!

I’ve whipped up this delicious Buffalo Cauliflower Pizza with Caesar Dressing to share with you! The recipe that is. I wish I could virtually send a piece to all of you!

Buffalo Cauliflower Pizza with Caesar Dressing

Serves: 2

Prep Time: 10 minutes of prep, 20 minutes to roast cauliflower, 10-15 minutes to bake pizza.

INGREDIENTS

Buffalo Cauliflower*

  • ½ head cauliflower
  • 2 tbsp. extra virgin olive oil (you can also use avocado oil)
  • ½ tsp. garlic powder
  • ½ tsp. oregano
  • Pinch of mountain salt (sea salt or Himalayan will work too)
  • ½ cup hot sauce of choice

Toppings for Pizza*

  • ¼ cup tomato sauce
  • ¼ cup thinly sliced red onion
  • 2 green onion stalks, chopped
  • Handful chopped parsley

*I usually don’t measure when I’m making pizza and just go with the flow. These are approx. measurements and can be adjusted to your liking.

Caesar Dressing**

  • 1 clove garlic
  • 2 tbsp. tahini
  • Juice of 1 lemon
  • ¼ cup cashews
  • 3-4 tbsp. water
  • 2 tbsp. extra virgin olive oil
  • 3 tbsp. hemp seeds

**Store this in the fridge in a glass container for about a week and use for salad, dipping veggies, on top of grilled veggies, etc.

DIRECTIONS

Directions for cauliflower

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Chop cauliflower into small florets and toss into a bowl.
  3. Add all other ingredients and mix until all of the cauliflower is coated in hot sauce.
  4. Spread out on baking sheet and bake for 20 minutes (make sure to check on them and flip them if needed).

Directions for Pizza Dough + Toppings

  1. While you’re waiting for the cauliflower to bake, prep the dough! Follow the instructions on the box on how to prep it. Make sure you bake the dough for 5 minutes before adding any toppings (like the box says).
  2. Add toppings – only tomato sauce, onion and cauliflower
  3. When you take it out of the oven, add the green onion, parsley and drizzle desired amount of Caesar dressing on top.

Directions for Caesar Dressing

  1. Add all ingredients to your blender, that’s it!
  2. Add more water if too thick.
